Pizza Rolls

Here’s a kid-friendly, quick, easy snack anytime the craving for pizza strikes.

(makes 6 to 8 servings)

Ingredients

1 sheet store-bought puff pastry

All purpose flour (for work surface)

Tomato sauce, homemade or jarred

1 cup (4oz) mozzarella cheese, shredded

2oz sliced pepperoni

2 tablespoons water

¼ cup (2oz) olive oil

Dried oregano or Italian seasoning, to taste

2 tablespoons grated Parmesan cheese

Optional: 4 tablespoons unsalted butted

Optional: 1 to 2 garlic cloves, minced

Instructions

Preheat oven to 400 degrees F (205 C)

Allow puff pastry to thaw slightly.  When pliable, unfold onto a lightly floured work surface.  Roll out lightly to smooth out any creases.

Spoon a few tablespoons of tomato sauce onto puff pastry.  Smooth out into a thin layer, leaving a 1-inch border along one edge.

Sprinkle shredded mozzarella over tomato sauce, distributing evenly.

Arrange sliced pepperoni over cheese, distributing evenly.

Turn pastry so that the 1-inch border is farthest away from you. Fold closest edge over and begin to roll away from you into a moderately tight roll.  Try not to compress the puff pastry too much so it can expand in the oven.

When you reach the far edge, use your fingers to moisten the exposed border edge with the water.  Continue rolling onto the moistened border and press lightly to seal.

Cut the roll into 6 or 8 equally sized pieces and arrange, cut side up, onto a sheet pan lined with parchment paper.

In a small bowl, whisk together the olive oil and dried oregano or Italian seasoning.

Using a pastry brush, lightly coat each roll with olive oil/seasoning mixture.

Sprinkle the top of each roll with grated Parmesan cheese.

Cook in the center of your preheated oven until the pastry has puffed and become golden brown, 15 to 20 minutes.  Rotate baking sheet partway through cooking time if necessary.

Warm any remaining tomato sauce while pizza rolls cook.

Optional: While pizza rolls cook, melt butter over low heat.  Stir in minced garlic and allow to infuse.  When pizza rolls are done, use a pastry brush to coat each roll lightly with garlic butter before serving.

Serve with additional warmed tomato sauce for dipping.  Recipe can be doubled.
