Chicken Fettuccine Alfredo

Homemade chicken fettuccine Alfredo better than any chain restaurant!

(makes 4 servings)

Ingredients

2 tablespoons olive oil

1½ lbs chicken breasts, cut into 4 portions

Salt and pepper to taste

1lb (16oz box) fettuccine noodles

Salt for boiling water

1 cup (8oz) heavy cream

4oz (1 stick) unsalted butter

2 cups grated Parmesan cheese

Chopped parsley for garnish

 

Instructions

Preheat oven to 400 F (205 C).

Heat olive oil in a large sauté pan over medium-high heat.  Add chicken and cook until browned, about 4-5 minutes per side.  Transfer to preheated oven until cooked through, about 10 minutes. Set aside and keep warm.

Bring a large pot of salted water to a boil.  Add pasta and cook according to package directions.  Drain and place in a large bowl of iced water.

Pour heavy cream into a large sauté pan and heat until simmering.  Add butter, stir, and cook until melted.  Simmer until thickened, about 5 minutes.

Add grated cheese and stir until melted and combined.

Stir in cooked pasta until coated.

Dice the cooked chicken, and stir into pasta and sauce.

Garnish with chopped parsley, and serve.
